Ingredients:
300g cooked lentils (room temperature)
1 avocado
1/2 grapefruit
2-3 handful salad
For dressing:
1 tbsp wine vinegar
3/4 tbsp honey (for vegan version use sirup – date, rice…, or sugar)
1/2 tsp garlic powder
1/2 tsp salt (or more by your taste)
1 tbsp lime juice
1/4 tsp black pepper
How to make it:
1. Cut avocado in cubes, peel grapefruit incl. inner skin and cut the flesh too. Cut salad and put in a bowl together with cooled or room temperature lentils.
2. Mix well dressing ingredients and pour in the bowl. Mix the salad and enjoy!
